The most widely cultivated crop in Okinawa is "sugarcane," the raw material for sugar. When the squeezed sugarcane juice is boiled down, it becomes brown sugar and can be further refined into white sugar. With its rich sweetness, brown sugar is full of minerals such as calcium, magnesium, and vitamins B1 and B2. As caster sugar goes through a further refining process it contains very few minerals, whereas brown sugar is made by boiling down the pressed juice, allowing many minerals to remain intact. In Okinawa, it is eaten as a snack or used as a seasoning.
