Pork is one of the indispensable ingredients in Okinawan cuisine. As the saying goes “eat every part of the pig except for its cry”. In Okinawa there is a custom of eating pork from head to toe (including cooking with the internal organs and even the blood). Okinawan people have raised pigs for a long time and have devised ways of cooking pork to make it tasty as a valuable source of protein. Today, pork can be enjoyed in a variety of flavors in many different ways. The best way of eating fresh pork is, shabu-shabu, a dish where the raw meat is quickly dipped into boiling water or soup."Agu" (pronounced Aguu) pork, is a crossbreed of Okinawa's native black pig and a western breed, and is characterized by its exquisite flavor and elegant marbled fat.

In Okinawa, there are many restaurants where you can eat agu pork, but at “Ufuya” in Nago City, in the northern part of Okinawa’s main island, you can experience the deliciousness of this pork with Okinawa soba and ”gozen”(a Japanese set meal) for lunch, and various course meals for dinner, in a special atmosphere.

Okinawa soba is a soul food Okinawans love. You can also enjoy Okinawa soba at Ufuya, where they take pride in their original homemade fresh noodles. They have their own noodle factory onsite and their special noodles are definitely worth a try.

The Ufuya building is an old private house built about 120 years ago. You can experience Okinawan history and culture through the traditional red tiles that shine against the dark green forest, and through the warmth of the beautifully timeless wood of the building.

Savor the special dishes in the cozy restaurant while enjoying the beautiful view of the garden and the relaxing sound of the waterfall.

After the meal, we recommend you take a walk on the trail in the grounds. The beauty of the garden decorated with Okinawa flowers and plants, and the view from the top of the trail will certainly enrich your memories of the trip.
